Bone Broth for J

Use organic chicken because chicken is full of antibiotics and hormones :(
Perfect to use in baby's soups or when you first let baby learn to drink from a sippy cup or small cup

1 whole Organic Chicken
1/4 cup Apple Cider Vinegar
2 Carrots, cut into 2-3 pieces
2 Celery, cut into 2-3 pieces
1 Onion, quartered
1 Bay leave
5 springs of Parsley
1 tbsp Black Peppercorns
1/2 tsp Salt
Water just enough to cover everything

Instructions: 

  1. Remove any liver/kidneys or organs inside the cavity of the chicken. Divide the chicken into wings, drumsticks, breasts. 
  2. Cover and soak the entire chicken in water and apple cider vinegar for 30minutes in the pot.
  3. Add everything else to the instant pot or soup pot, and slow cook or simmer on high for about 2-3 hours and then remove the meat from the bones. Continue cooking for another 18 hours. 
  4. Strain and remove all the ingredients and skim the fat. 
*Freezes well. Use within 3 months.*
*Use the chicken meat in stews, salads, fajitas, etc :P

Whenever I use a whole chicken to make chicken broth, I reserve the meat for chicken salads, chicken congee, and chicken stews. It's the perfect way to make full use of the chicken!
