Broccoli Leek soup

Ingredients:
400g Broccoli, cut into florets
1 Leek (white parts only)
4 Garlic, cloves
1 cup Potato, diced
1 cup Spinach, packed
4 cups Unsalted Chicken or vegetable broth
1/2 tsp freshly cracked pepper
parmesan (optional)
greek yogurt

Instructions:

  1. Heat a pot over medium heat with olive oil, add leeks and cook for about 5 minutes or until soft. Add garlic and cook until aromatic. 
  2. Add potato to pot of broth, bring to a boil, then reduce to a simmer for 10 minutes. 
  3. Add broccoli to the soup, cook for another 5 minutes. Add spinach
  4. Blend the soup, stir in parmesan and/or greek yogurt (for extra calories for baby) and serve. (Can add a pinch of salt to the adults' portion)

Whenever I use a whole chicken to make chicken broth, I reserve the meat for chicken salads, chicken congee, and chicken stews. It's the perfect way to make full use of the chicken!
