No added sugar, but naturally sweetened with apple and banana. For added nutrition, spread a thin layer of natural nut butter*
1 cup Oat Flour (ground rolled oats)
1 cup Whole Wheat Flour
1.5tsp Baking Powder
0.5tsp Baking Soda
1 tsp Ground Cinnamon
100g Carrots, roughly chopped
100g Banana
1 cup Plain Greek Yogurt (full fat, whole milk)
1/3 cup milk
1 Large Egg
1 tsp Vanilla

Dry Ingredients:
1 cup Oat Flour (ground rolled oats)

Wet Ingredients:
150g Red Apple, roughly chopped100g Carrots, roughly chopped
100g Banana
1 cup Plain Greek Yogurt (full fat, whole milk)
1/3 cup milk
1 Large Egg
1 tsp Vanilla
Instructions:
- Preheat oven at 350F, convection.
- Sift and mix all dry ingredients together.
- Put all wet ingredients into blender, and blend until smoothie like.
- Add the wet ingredients to the dry ingredients, and mix until just blended. Do NOT overmix (creates too much gluten and muffin becomes stiff).
- Pour into greased muffin tins or ungreased silicone cases. Bake for 20 minutes or until a toothpick that's inserted into the muffin comes out clean.
Can freeze these muffins for later.
*Be sure to use nut butter made of only nuts, no added oils, salts or sugars.
