Apple Mango Spinach Quinoa Smoothie/Puree

So easy to make if you have a powerful blender like the Vitamix or Ninja.

The recipe makes about eight 150mL reusable pouches. Perfect for freezing and thawing when you need it for baby on the go. To serve, I like to add it to some plain, whole milk greek yogurt, or cooked rolled oats for flavour without added sugars. I also prefer to add a teaspoon of ground flaxseeds or 3 tablespoons of hydrated chia seeds for omega 3s, protein and fibre. I like to serve this to J especially when he's fussy with eating due to teething.

You can substitute the spinach with other mildly flavoured nutritious greens, like kale.

Ingredients:

1 cup Quinoa, cooked
1 cup Organic Apple, diced
1 cup Mango chunks
1 cup Organic Spinach, packed tightly
1/2 cup almond milk* (or more to blend everything, or as much as you need to achieve the consistency/texture you need for your baby)

Instructions:

  1. Cook the quinoa as per instructions on package (usually takes 15-20 minutes)
  2. Add all ingredients into Vitamix and blend until smooth or the consistency that you like
  3. Fill your pouches or containers. 
  4. Serve, keep in fridge up to 3 days or keep in freezer up to 3 months.

*could be formula, breast milk, or any milk appropriate for your baby
